The G – Day Hi-Ball
Bombay Sapphire Gin, herbaceous Green Chartreuse & home-made fiery ginger lemonade give this drink its name. These ingredients are combined w/ the sweet citrus fruit of Bergamot liqueur to deliver aromatic, dry & herbal notes in this superb twist on the classic Hi-Ball.
Gin Blitz
Using City of London Gin, the first new distillery in the City for over 200 years, we combine subtle anise & fresh lavender flavors w/ the citrus botanicals of City of London Gin to create a long & refreshing G&T.

For a cocktail w/ great flavours & less guilt, look no further than The Churchill Bar’s new Beluga Slim Fizz, a classy & delightfully refreshing upgrade of the ever popular Vodka Soda Lime. Sir Tom
The famous Collins dates back to London in the early nineteenth century, when several bars began to serve a Gin Punch that was stretched out w/ soda water & garnished w/ an orange wheel. Inspired by this classic British tradition, we combine Old Tom Gin, the spirit popular in the 18th & 19th Century, w/ a fresh squeeze of lemon juice, before adding a touch of sugar syrup & grapefruit tonic for extra freshness.

At the beginning of the nineteenth century, Siberian communities moved to a rural location in Guadalupe, Mexico. Along w/ new hopes & dreams, the communities brought a strong Siberian culture, influencing food choices & daily life. To honour this community, a truly herbal combination of tarragon & Maraschino liquor is mixed w/ wild Siberian berries, whilst the peppery note of Patron silver lends richness & a unique Mexican touch.
Boreal Glacier Martini
In the heart of Siberia, surrounded by snow & pine, the legendary Mariinsk Distillery precisely handcrafts the premium Beluga Vodka leading to an extraordinary taste that is both smooth & luxurious. Today, w/ a mix of century-old tradition & innovation, we invite you to taste a truly unique libation, mixing premium Beluga Noble Vodka w/ extra dry Vermouth & Pino Mugo.
Tsarina
Tsarina is the title given to a female supreme ruler of Russia. To pay tribute to the Tsarina’s high profile, Bombay Sapphire Gin is shaken w/ the renowned Sangue Morlacco liquor & freshly squeezed lemon juice, whilst red currant syrup & Maggiorana herbs, found on the slopes of Russia, provide a delightful balance to this memorable cocktail for an iconic supreme ruler.
The Gardenia Trail
The ‘Great Highway’, the longest land trade route from China to Europe, through Siberia, was also named the ‘Tea Road’ thanks to the vast quantities of tea transported here. We honour the legendary route by shaking fresh Oolong Tea from China w/ Crème de Violette, Orgeat syrup & the unique London No.1 Gin, known for its delicate blend of botanicals, including Gardenia flower. Historically, this flower was infused w/ tea from the ancient Siberian tribes who resided at the Baikal Lake, the main stop on route after leaving China
Northern Delights
With this drink we salute one of the most famous dynasties in the world, the Turkish Empire, who heavily influenced Siberia’s food & beverage culture, especially w/ their passion for coffee. Inspired by the classic kvass, a typical Siberian beverage crafted from barley & rye, we mix malt barley & strengthen this w/ rye whisky & Mr. Black coffee liquor, before serving it in a beautiful ottoman cup w/ a delicate layer of cacao cream, a delightful concoction to enjoy under the mesmerizing Northern Lights.
White Fur Warrior
The White Army was a confederation who fought the Bolsheviks in the Russian Civil War. Japan, USA & England were all part of it & to pay tribute to this mix of cultures & traditions, we have created the ‘White fur Warrior’ cocktail. Sakè Honjozo, honouring the Japanese soldiers, is gently heated up & mixed w/ Bacardi White Rum, whole milk & topped w/ a toasted marshmallow. Toasting marshmallows over a campfire was a popular daily ritual for all the soldiers & continues to be a popular tradition for all today.

War Rooms Martini
Our very special Churchill Craft Gin is mixed w/ War Rooms Bitters, a concoction made from the very essence of moisture from Churchill’s secret wartime bunker. Garnished w/ a pickled baby beetroot washed in Churchill Gin to finish off a truly unique martini.
Never Give In
This cocktail was specially created by The Churchill Bar team using our very own exclusive Gin, distilled by Sacred to a specific recipe, as the base, Green Chartreuse to represent medicine given to the injured, absinthe to represent bravery & courage & finished off w/ smouldering fresh rosemary for its purifying qualities & to symbolise the smoke that Sir Winston would have defiantly looked upon from the roof of the War Rooms.
The Empress
In 1877, Queen Victoria was proclaimed “The Empress of India” & The Empress commemorates this much celebrated title by adding a Churchillian twist to Her Majesty’s favourite tipple. The voluptuous single malt, port cask aged Glenmorangie Quinta Rubin whisky is stirred delicately down w/ Dubonnet, the Queen Mother’s preference, & a home-made red wine reduction before being served w/ a glorious caramel crown & elegant Hibiscus smoke.
Fig Old Fashioned
Makers Mark Bourbon & our home-made rosemary syrup are combined w/ a dash of Churchill Bitters & garnished w/ a ripened confit fig half & an orange twist.
Churchill Martini
Legend has it that Sir Winston Churchill liked his Martinis served without any vermouth added to the drink, only present in the same room. He is quoted as saying “Glance at the vermouth bottle briefly while pouring the juniper distillate freely”. Together w/ Sacred Distillery, we have created our very own Churchill Craft Gin w/ a careful balance of fresh botanicals, made in London only a few miles from The Churchill Bar & Terrace. Enjoy this Martini how Winston himself would have it or make it a Gibson w/ our own pickled onions instead of an olive.
The Winkle
We have specially created this drink to honour the Winkle Club, which was formed in 1900 by the Hasting’s fishermen to help the under privileged. Winston Churchill was made an honourable member in 1955. We have combined Pussers Rum, issued to the British Royal Navy for over 300 years, w/ Sir Francis Drake’s use of lime juice to fight off scurvy, chai syrup & spices. Earl Grey tea is also used, a salute to the Great East India Trading Company a testament to the trade routes which the British Empire controlled for so long. In addition, from the Garden of England, Kent, we have added a splash of fresh apple juice, & is served in a coupe glass. For each Winkle served, one pound will be donated to the Winkle Club.
The Churchill Bar Fizz
To celebrate the success of The Churchill Bar we have recreated a signature cocktail so its legacy will always live on, beginning w/ our bespoke Sacred Churchill Craft Gin, created w/ the Sacred Distillery just a few miles away. Add to this a reduction of Pol Roger champagne, Sir Winston Churchill’s favourite & the namesake of one of his racehorses, plus some muddled Granny Smith apple, floral hibiscus tea syrup balanced w/ lemon juice & egg whites & a hibiscus flower bitters created especially for us by The Robin Collective. All of these delightful ingredients are complemented by Pol Roger champagne before finishing this exotic libation w/ a limoncello sugar rim.
The Botanist
Winston & Clementine spent much of their time in the gardens of Chartwell, & botany played a large part in their lives as we know them. From the winter gardens of England we combine potato-based Chase vodka w/ honey & lemon for balance, Greengage liqueur & home-made basil & ginger juice to add a delightful green hue & zingy finish. We top this off w/ the quintessential ladybird resting on a leaf!

Planter's Punch
The iconic Planter’s Punch, a “West Indian Recipe”, as described in 1978 in the Victorian weekly magazine “Fun”, was based on an ancient style of punch-making based on the mantra “one for sour, two for sweet, three for strong, four for weak’’. Today, following tradition, we combine the complexity of the Caribbean’s rums w/ the sweetness of grenadine & falernum, balanced w/ a splash of freshly squeezed lime juice.
Bijou
In the early 1880s, American bartenders seeking to cater to a more sophisticated, cosmopolitan clientele, mixed spirits w/ vermouth & other European elixir to broaden the range of colours on their palettes. We have remastered the iconic Bijou, mixing Churchill’s favourite Star of Bombay Gin w/ Carpano Antica Formula & the vibrant Green Chartreuse herbal liquor for a truly unique libation.
Sazerac
This iconic drink is heralded by many as the oldest known American cocktail. Originally made w/ cognac Sazerac du Forge et Fills, it is the official cocktail of New Orleans. At The Churchill Bar, we have chosen the iconic Sazerac Rye Whisky, a popular replacement of the cognac as it has changed over time, stirred in half measure w/ the rich & deep Hine Cigar, complemented by a few drops of the distinctive Peychaud’s bitters.
Mai Tai
Trader Vic claims to have created the venerable Mai Tai for two friends back in 1944. The couple, upon sipping the drink, exclaimed “Mai Tai Roa Ae”, meaning “Out of this world” in Tahitian. With the hopes of recreating such an extraordinary reaction, this twist on the classic blends Meyer’s Rum & Wray & Nephew Overproof Rum w/ Dry Curacao, freshly squeezed lime juice & The Churchill Bar’s homemade falernum syrup for a refreshingly sweet finish.
Pisco Sour
Like all cocktails the history of the Pisco Sour, is shrouded in myth. Being the proud British bar that we are, we prefer the version that attributes the creation of the Pisco Sour to Elliot Stubb, an English Steward on the ship "Sunshine" who disembarked in Iquique, Peru, to open his own bar. Elliot soon made the Pisco Sour his house speciality. We have stayed traditional to Elliot's method & shake Pisco w/ fresh lime juice & sugar. We then add a little egg white & our own Churchill Bitters for a true South American classic.

The prohibition era, 1920-1933, witnessed the ban on sale, production, transportation & importation of alcoholic beverages. During this time alcohol was being secretly produced & consumed in hidden locations w/ varied methods. Here at The Churchill Bar & Terrace, we go back in history to create a range of cocktails that are served table side in vintage silver tea sets to create an unforgettable experience:
Woodford Reserve Fume
Woodford Reserve Bourbon is delicately mixed together w/ Lapsang Souchong Tea from China to create a smooth yet smoky flavour. The addition of home-made walnut syrup provides a nuttiness that is a perfect complement. Garnished w/ an absinthe flamed walnut, this is surely a tea like no other before.
Southern Manhattan
A drink created in Manhattan w/ a touch of the South. We combine the unique Jack Daniel’s Single Barrel w/ Antica formula, angostura bitters & a touch of maraschino cherry juice that results in a well-balanced Manhattan.
Maître De Chai
Throughout many languages in the world, the word chai means tea. In the Grey Goose distillery the cellar master holds the title of Maître de Chai. Following the tradition of Indian chai, where spices such as cinnamon & cardamom are used, we have created our own homemade chai syrup. This is then shaken w/ Grey Goose Vodka, Cointreau, lime juice & absinthe which takes your palate through Asia & Europe.
Old Fashioned Gentleman
The first recorded definition of a cocktail is “stimulating liquor, composed of spirits of any kind, sugar, bitters & water” from 1806 which encompasses an old fashioned. Gentleman Jack provides the spirit which is stirred together w/ orange bitters, brown sugar syrup & ice. Served w/ an orange peel & some bourbon infused cherries, it is a drink any gentleman would happily sip on.
Hedgerow Bramble
The Bramble is considered to be one of the most significant gin cocktails in the last century. Bombay Sapphire Gin is shaken together w/ lemon juice to which we add crushed ice. A combination of freshly picked wild berries from the hedgerows of the English countryside & crème de mure are used to make a coulis that is slowly poured over the ice resulting in a fruity, refreshing cocktail.
British Raj Mojito
A Churchillian twist on the classic Mojito. Between 1858 & 1947, the Indian subcontinent was under the rule of the British Empire & referred to as the British Raj. Bacardi Superior Rum along w/ brown sugar syrup, lime, mint, chili & ginger beer honour the ties between the two continents.

Blenheim Fizz
To celebrate Blenheim Palace, Winston Churchill’s family home & now a World Heritage Site surrounded by enchanting green gardens, flowers & vineyards, we mix Beluga Vodka & grape syrup balanced w/ freshly squeezed lemon juice, before topping up w/ Nyetimber Sparkling Wine, a layer of Limoncello foam & a basil garnish for that five star finish.
Rhubarb & Rosehip Bellini
Our twist on a classic Bellini, using a beautiful combination of bittersweet rhubarb & the floral sweetness of rosehip to complement Prosecco. This drink delivers a clean fresh palate w/ a bittersweet finish.
Churchill's Clementine Champagne Cocktail
First recorded in Jerry Thomas’s 1862 book ‘How To Mix Drinks’ where he mistakenly specifies this as a shaken drink. Our version of the Classic Champagne Cocktail pays homage to Sir Winston Churchill & his beloved Clementine. We soak a brown sugar cube w/ home-made Clementine Bitters & Hine Rare VSOP Cognac then top w/ Churchill’s favourite Champagne, Pol Roger.

NIGHTCAP We honour Winston’s ingenious invention, the Onesie, w/ an indulgent evening nightcap just like Sir Winston would have enjoyed w/ Clementine herself, even down to the tipple of Angostura Rum that he would have cheekily added behind her back. The sweet notes of Harvey Bristol Cream & egg yolk, combined w/ hazelnut liquor to make this creamy cocktail a real pleasure to drink. Add to this smooth Angostura 1919 Rum, whole milk, Horlicks, delightfully caramelized Demerara sugar & a cookie & you have the perfect concoction.

Adding a Churchill twist to the classic HankyPanky cocktail, we honour Coley’s original recipe but combine our very own Sacred Churchill Craft Gin w/ Carpano Antica Formula & a spoon of Fernet Branca, before topping w/ Chase Orange Marmalade Vodka air to add a delicate aroma sure to satisfy all the senses.

Honouring another famous Churchillian quote, we use one of the most splendid spirits available - Dictador 20 year old Colombian rum - & take inspiration from a classic Boulevardier cocktail. Dictador is stirred down over lavender smoked ice w/ a bitter Italian liqueur, Cynar & the classic flavourings of Campari. Presented in crystal carafe & poured over a perfect ice ball.
Chartwell House Mulled Wine

Mulled wine is a staple of any British Christmas, so at The Churchill Bar & Terrace we have created a delicious version. Churchill LBV Port is heated w/ a full-bodied red wine, Courvoisier Exclusif VSOP Cognac, lemon & sugar to create a beautifully warming winter drink. Finished w/ star anise & an orange twist & served in a cobbler.
